Homemade Almond Milk!
Only 3 ingredients needed for this 100% all natural almond milk
Equipment
- Nutribullet or any other high power blender.
- Strainer. Cloth strainer works best.
Ingredients
- 2 cups almond soaked, drained and rinsed
- 4 cups water 2 cups for soaking and 2 cups for blending
- 1 tbsp honey, stevia or sweetener of your choice optional
Instructions
- Soak almonds in 2 cups of water for 2 days.
- Drain and rinse almonds.
- Blend almonds and sweetener (optional) and remainder of water in bender at the highest possible speed.
- Pour through cloth strainer and be sure to squeeze out all liquid. Enjoy!

Baked Sweet Potatoes with White Beans
Ingredients
- 1 medium sweet potatoes chopped in small cubes
- 1 can white beans low sodium
- 1/4 red, green, yellow, orange, bell pepper chopped
- 2 tablespoon olive oil
- 2 teaspoon Italian seasoning
- 1/4 teaspoon Jamaican Jerk seasoning paste
- salt and pepper to taste
Instructions
- Toss sweet potatoes, 1 tbsp olive oil and 1 tbsp Italian seasoning in large bowl, mixing all ingredients together. Spread out in a baking pan and bake at 350 until potatoes are tender.
- In a sauce pan, sautee bell peppers and onion with remainder of olive oil for 5 minutes
- Add white beans, jerk seasoning, salt, pepper and remainder of Italian seasoning. Stir all ingredients together and let simmer for about 5 minutes.
- Serve hot with sweet potatoes
- Enjoy

Braised Collard Greens with Peppers
Ingredients
- 2 bunches collard greens chopped
- 1/4 red, green, yellow, orange, bell pepper chopped
- 1 medium tomato chopped
- 1/2 small red onion chopped
- 1 clove garlic chopped
- 1 tablespoon Italian seasoning
- 1/4 teaspoon Jamaican jerk seasoning
- 1 tablespoon olive or coconut oil I prefer coconut oil as it adds additional flavor
- salt and pepper to taste
- 1 cup water
Instructions
- Sautee onion, peppers and garlic in coconut oil
- Add tomatoes and sautee for an additional 5 minutes
- Add collards and 1/2 the water
- Add jerk seasoning, Italian seasoning, salt and pepper, cover and let simmer for about 10 minutes, stirring occasionally
- Add remainder of water and let simmer until collards are tender
- Enjoy!

Loaded, Baked Sweet Potato
Ingredients
- 1 medium sweet potato baked
- 1 can whole kernel corn drained & rinsed
- 1 can each red kidney beans and black beans drained & rinsed
- 1/4 of a red, yellow, green and orange bell pepper chopped
- 10 oz piece of grilled or baked salmon or chicken breast optional
- 1 tablespoon coconut oil
- Pinch of sea salt and black pepper to taste
Instructions
- Sautee bell peppers with coconut oil in medium saucepan for about 2 minutes
- Add corn and red beans to sauce pan, sautee for an additional 2 minutes
- Add salmon or chicken and combine all ingredients
- Add salt and pepper to taste
- Split sweet potato in half and add as much meat and veggies
- Enjoy!

Oven Roasted Potatoes and Bell Peppers
Ingredients
- 1 medium Irish potato
- 1 medium sweet potato
- 1/4 red, yellow, green and orange bell pepper chopped
- 1 tablespoon coconut oil
- 1 Tablespoon Italian Seasoning
- A sprinkle of sea salt
- Dash of black pepper
Instructions
- Wash and dice potatoes
- Wash and dice bell peppers
- Combine potatoes, peppers and all remaining ingredients in a large bowl and mix
- Grease baking dish or pan with a dabble of coconut oil .
- Bake for 20-30 minutes or until potatoes are tender.
- Enjoy!

Spiralized Zucchini and Veggies
Ingredients
- 1 large Zucchini -spiraled
- 1 Cup cooked or canned corn if canned, drain and rinse
- 1 small tomato – chopped
- 1/4 red, green, yellow, orange bell pepper chopped
- 1 small onion -chopped
- 1 clove garlic – chopped
- 1/4 tablespoon Jamaican jerk seasoning I prefer the paste over the power kind
- 2 tablespoon olive oil
- 1 tablespoon Italian seasoning
- Dash of sea salt and black pepper to taste
Instructions
- Sautee onion and garlic in olive oil
- Add bell peppers and tomatoes, sautee for an additional 5 minutes
- Add corn and cook for 2 -3 additional minutes
- Add zucchini and remainder of ingredients
- Combine all ingredients and cook for approximately 2-3 minutes
- Enjoy!

Sauteed Quinoa with Black Beans and Collard Greens
Ingredients
- 1 cup cooked or canned black beans if canned, drain and rinse
- 1 cup cooked or canned collard greens if canned drain and rinse
- 1/4 of a red, yellow, green and orange bell pepper chopped
- 1 small onion chopped
- 1 to small tomato chopped
- 1 cup cooked quinoa
- 1 tablespoon coconut oil
- 1 tablespoon Italian Seasoning
- dash of sea salt and black pepper
- 1 tablespoon Jamaican Jerk seasoning
- 1/2 teaspoon garlic seasoning
Instructions
- Sautee onions, bell peppers and tomatoes in coconut oil
- Add black beans , let simmer for 3-5 minutes
- Mix in collard greens and quinoa
- Add Jamaican Jerk, Italian, Seasoning , sea salt, garlic seasoning and black pepper
- let simmer for an additional 3-5 minutes
- Enjoy !

Curried Chickpeas
Ingredients
- cups cooked or canned chickpeas if canned, drain and rinse
- 2 medium carrots chopped
- 1/4 red, yellow, green and orange bell pepper chopped
- 1 can coconut milk
- 1 tablespoon Italian seasoning
- 1/4 teaspoon Jamaican jerk seasoning optional
- 2-3 tablespoon curry powder
- Salt and pepper to taste
- 1/2 tablespoon garlic seasoning
- 1 tablespoon turmeric
Instructions
- Sautee carrots with coconut oils in medium saucepan for about 2 minutes
- Add bell peppers to saucepan, sautee for an additional 2 minutes
- Add chickpeas and combine all ingredients
- Add coconut milk
- Add curry powder, turmeric, garlic seasoning, Italian seasoning, jerk seasoning, salt and pepper
- Combine all ingredients and let simmer for additional 5-8 minutes on low hea
- Enjoy!
