
Sauteed Quinoa with Black Beans and Collard Greens
Ingredients
- 1 cup cooked or canned black beans if canned, drain and rinse
- 1 cup cooked or canned collard greens if canned drain and rinse
- 1/4 of a red, yellow, green and orange bell pepper chopped
- 1 small onion chopped
- 1 to small tomato chopped
- 1 cup cooked quinoa
- 1 tablespoon coconut oil
- 1 tablespoon Italian Seasoning
- dash of sea salt and black pepper
- 1 tablespoon Jamaican Jerk seasoning
- 1/2 teaspoon garlic seasoning
Instructions
- Sautee onions, bell peppers and tomatoes in coconut oil
- Add black beans , let simmer for 3-5 minutes
- Mix in collard greens and quinoa
- Add Jamaican Jerk, Italian, Seasoning , sea salt, garlic seasoning and black pepper
- let simmer for an additional 3-5 minutes
- Enjoy !
