
Loaded, Baked Sweet Potato
Ingredients
- 1 medium sweet potato baked
- 1 can whole kernel corn drained & rinsed
- 1 can each red kidney beans and black beans drained & rinsed
- 1/4 of a red, yellow, green and orange bell pepper, chopped
- 10 oz piece of grilled or baked salmon or chicken breast chopped in small pieces
- 1 tablespoon coconut oil
- pinch of sea salt and black pepper to taste
- 1 tablespoon italian seasoning
- 1/2 tablespoon Jamaican jerk seasoning I prefer the paste instead the powder kind
Instructions
- Sautee bell peppers with coconut oil in medium saucepan for about 2 minutes
- Add corn and red & black beans to sauce pan, sautee for an additional 2 minutes
- Add salmon or chicken and combine all ingredients
- Add salt and pepper, Italian and Jamaican jerk seasoning and any other seasoning you like.
- Split sweet potato in half and add as much meat and veggies
- Enjoy!
