
Braised Collard Greens with Peppers
Ingredients
- 2 bunches collard greens chopped
- 1/4 red, green, yellow, orange, bell pepper chopped
- 1 medium tomato chopped
- 1/2 small red onion chopped
- 1 clove garlic chopped
- 1 tablespoon Italian seasoning
- 1/4 teaspoon Jamaican jerk seasoning
- 1 tablespoon olive or coconut oil I prefer coconut oil as it adds additional flavor
- salt and pepper to taste
- 1 cup water
Instructions
- Sautee onion, peppers and garlic in coconut oil
- Add tomatoes and sautee for an additional 5 minutes
- Add collards and 1/2 the water
- Add jerk seasoning, Italian seasoning, salt and pepper, cover and let simmer for about 10 minutes, stirring occasionally
- Add remainder of water and let simmer until collards are tender
- Enjoy!
