Baked Sweet Potatoes with White Beans

  • 1 medium sweet potatoes chopped in small cubes
  • 1 can white beans low sodium
  • 1/4 red, green, yellow, orange, bell pepper chopped
  • 2 tablespoon olive oil
  • 2 teaspoon Italian seasoning
  • 1/4 teaspoon Jamaican Jerk seasoning paste
  • salt and pepper to taste


  • Toss sweet potatoes, 1 tbsp olive oil and 1 tbsp Italian seasoning in large bowl, mixing all ingredients together. 
    Spread out in a baking pan and bake at 350 until potatoes are tender. 
  • In a sauce pan, sautee bell peppers and onion with remainder of olive oil for 5 minutes 
  • Add white beans, jerk seasoning, salt, pepper and remainder of Italian seasoning. Stir all ingredients together and let simmer for about 5 minutes.
  • Serve hot with sweet potatoes
