Ingredients
  

  • 2 bunches collard greens chopped
  • 1/4 red, green, yellow, orange, bell pepper chopped
  • 1 medium tomato chopped
  • 1/2 small red onion chopped
  • 1 clove garlic chopped
  • 1 tablespoon Italian seasoning
  • 1/4 teaspoon Jamaican jerk seasoning
  • 1 tablespoon olive or coconut oil I prefer coconut oil as it adds additional flavor
  • salt and pepper to taste
  • 1 cup water

Instructions
 

  • Sautee onion, peppers and garlic in coconut oil 
  • Add tomatoes and sautee for an additional 5 minutes 
  • Add collards and 1/2 the water 
  • Add jerk seasoning, Italian seasoning, salt and pepper, cover and let simmer for about 10 minutes, stirring occasionally
  • Add remainder of water and let simmer until collards are tender 
  • Enjoy!
