Ingredients
  

  • 1 medium sweet potato baked
  • 1 can whole kernel corn drained & rinsed
  • 1 can each red kidney beans and black beans drained & rinsed
  • 1/4 of a red, yellow, green and orange bell pepper chopped
  • 10 oz piece of grilled or baked salmon or chicken breast optional
  • 1 tablespoon coconut oil
  • Pinch of sea salt and black pepper to taste

Instructions
 

  • Sautee bell peppers with coconut oil in medium saucepan for about 2 minutes
  • Add corn and red beans to sauce pan, sautee for an additional 2 minutes
  • Add salmon or chicken and combine all ingredients
  • Add salt and pepper to taste
  • Split sweet potato in half and add as much meat and veggies
  • Enjoy!
