Sauteed Quinoa with Black Beans and Collard Greens

Ingredients

  • 1 cup cooked or canned black beans if canned, drain and rinse
  • 1 cup cooked or canned collard greens if canned drain and rinse
  • 1/4 of a red, yellow, green and orange bell pepper chopped
  • 1 small onion chopped
  • 1 to small tomato chopped
  • 1 cup cooked quinoa
  • 1 tablespoon coconut oil
  • 1 tablespoon Italian Seasoning
  • dash of sea salt and black pepper
  • 1 tablespoon Jamaican Jerk seasoning
  • 1/2 teaspoon garlic seasoning

Instructions

  • Sautee onions, bell peppers and tomatoes in coconut oil
  • Add black beans , let simmer for 3-5 minutes
  • Mix in collard greens and quinoa
  • Add Jamaican Jerk, Italian, Seasoning , sea salt, garlic seasoning  and black pepper
  • let simmer for an additional 3-5 minutes
  • Enjoy !
